Around the World Degustation Dinner
Around the World Degustation Dinner was held on 12th of June at Lagoon. It was an AMAZING event, every guest received a passport which included their menu.
First stop was the Outback Australia wherewe enjoyed Outback Damper – Lemon Myrtle, Lager, Honeycomb & Dehydrated Ants. Arrival drink was Stonefish Cuvee Brut – Rich creamy palate with a crisp & clean finish
Then we took off to Japan where we enjoyed Sashimi of Scampi, soy pearls, creamed horseradish
Bags packed and on the way to Greece, we were served Alpha Sauvignon Blanc, Florina Greece. Rated in the Top 15 SB’s in the
World. Beautiful fruit characters of a SB with a dryer finish. dined on Deconstructed Greek Salata – Anchovy Dust, Heirloom Vine ripened tomatoes, Dried Kalamata Olives, Fetta Truffle Foam, Sous Vide Octopus.
LONDON CALLING – Bloody Mary Champagne – Ice filtered Bloody Mary, osmosis flavoured Celery & tabasco pearls
On our way to France we enjoyed Daniel Etinne Defaix Chablis – From Chablis in France. Classic match to snails. Crisp Dry white. On the menu Escargot – Sautee, Parsley Terrine, Raddish Carrot Trail.
Next stop China – Tibetan Tea – Chicken, Dark Steak, Bell Soup, Chai Spices
Thailand here we come – Wagyu Thai Beef – Rice Crackle, Infused Baby Roma Tomato, Inject Coriander, Wagyu, Baby Raddish & Thai Syrup , matched with 2003 Forester Cabernet Sauvignon. Full bodied. Rich lingering fruit driven finish. Margaret River WA
Back to the Aussie Outback for Kangaroo Loin – Camp fired w Charcoaled Soil, wrapped in Paperbark, served w native Australian Berries, Herbs, Spices & Coastal Greens. Matched with 2010 Di Giorgio Shiraz, Coonawarra SA. Big, Full bodied Ripe raspberry and mulberry flavours with nuances of pepper & spice.
Palate cleanser was found in the Amazon Rain forest – Acmella Flower Gel – has numbing properties.
Morocco! Beetroot & Goats curd w Tunisian Pastry, Beetroot Powder, Smoked Goats Curd & Moroccan Dried Fruit. Matched with Wicked Secrets Pink Moscato, Kiwi fruit, raspberries & strawberries w beautiful bubbles.
Final Destination Persia – Honey Pistachio Gelato, Caramelised Pastry. Iranian Fairy Floss. Perfectly matched with Persian Espresso Martini.
